We need to consume a healthy balanced diet which contains protein, fat, carbohydrates, vitamins etc. So a better approach to eat healthy food is to make certain small changes in your lifestyle. Many a times we throw the skin of the vegetables but the skin is the most important part of the vegetable which contains all the required nutrients in it. Here are some simple recipes to make from the skin of the vegetable.

Ridge gourd South Indian Chutney Recipe

Ridge gourd

A very simple and easy to prepare Ridge guard chutney. It hardly takes 10-15 mins to prepare. This tasty chutney can be served with plain rice or rotis. It is simple and healthy. Read more to know the ingredients and the method to make this recipe. My kids like this so much that it is a regular diet in our house.

INGREDIENTS REQUIRED:

Ridge guard -1 chopped ridge guard

Coconut-1 cup(grated)

Green chilies -5 to 6

Tamarind-  a piece

Salt –as required

One spoon of oil

Mustard seeds- ½ tsp

Methi  seeds- ½ tsp

A pinch of Hing(asafoetida)

Ridge gourd chutney

Method:

Step1: heat oil in a pan and add mustard seeds,(after mustard seeds crackle )

add methi seeds ,hing.

Step2: After methi seeds turns brown, add green chillies , chopped ridge guard and sauté for few minutes

 Step3: For the above add grated coconut, tamarind and add a cup of water sauté for few minutes till the water gets drained

Step4: The ridge guard turns soft( add salt) 

Step5: blend this mixture to a smooth paste n store in a tight container

At last add tadka

Ridge guard chutney is ready to serve

Lady Finger Chutney

Lady Finger

Lady’s finger is a most loved vegetable. A variety of dishes can be made from this vegetable but have you ever tried to make chutney from Lady’s finger. It is very easy and simple to prepare. It contains all the required nutrients in it. So what are you waiting for prepare the chutney and do share pictures with us.

INGREDIENTS REQUIRED:-

Ladys finger-10 to 15

Urad dal- 2tsp

Red chillies-6 to 8 (as required)

Tamarind – a piece

Salt – as required

Hing (asafoetida)

METHOD:-

Step1 :- take a pan (heat) add urad dal , red chillies ,Hing and sauté till urad dal turns golden brown and keep aside

Step2:- take a pan and add 2tsp of oil, add chopped pieces of lady's finger and sauté till stickiness removed and add salt, tamarind. Keep aside (cool)

Step 3: add step1 ingredients to a mixer and blend (powder form)

Step4 : now add step 2 ingredients to step 3 and blend.(can add little water if required)

Lastly add tadka

Lady finger chutney is ready to serve.

Radish Chutney

Radish chutney

Winter season is slowly setting in and one can get fresh Radish available now. If you are tired of eating Radish Paratha or subzi here is another variety from this wonderful vegetable. Radish has all the required nutrients and is rich in antioxidants and anthocyanins. Here is a quick simple recipe from Radish. Relish it with plain Rice or rotis.

INGREDIENTS REQUIRED:-

Peels of radish -4 TO 5

Coconut – grated  1cup

Green chilies – 6 to 8

Tamarind – a piece

Salt –as required

METHOD:

Step1: wash the peels of radish in clean water and chop it into small pieces(no need to add water because radish contains water )

Step2: add the above pieces , grated coconut , green chillies and tamarind and salt to the blender and blend it well to a smooth paste.

Lastly add tadka

A good recipe for rice, rotis

Radish chutney is ready to serve.

Cucumber chutney

Cucumber is one such vegetable which is consumed as salad or made vegetable out of it. Cucumber contains lot of water in it and is one of the best vegetable if you are on the program of weight loss. It contains very low calories hence one is not restricted in the quantity of eating. But some times one may get bored of eating it raw in salad all the time. So one  can try this chutney and enjoy a different variety.

INGREDIENTS REQUIRED:

Peeled cucumber finely chopped -1 in no

Coconut –grated 1cup

Green chilies- 5 to 6

 Tamarind – a piece

Salt –as required

Tadka: oil -1tsp

 Mustard seeds- ½ tsp

 Urad dal – 1tsp

  Turmeric – a pinch

   Hing- a pinch

METHOD

Step1: blend grated coconut, green chilies , tamarind and salt in a mixer without water .

Mix finely chopped cucumber, above paste and tadka together before serving

a very good chutney for rice and Rotis.

Cucumber chutney is ready to serve.

Chana Dal Chutney

Chana Dal

A healthy dal which contains good amount of protein. Other than making dal or ladoo from Chana dal one can try this simple and easy recipe of chutney. It takes around 15 minutes to prepare. It is also known as split Bengal gram and are flat on one side and rounded on the other side.

INGREDIENTS REQUIRED:

Chana dal -3tsp

Coconut grated-1 cup

Red chillies- 5 to 6

Tamarind – a piece

Methi seeds-1/4 tsp

Salt as required

METHOD

Step1: sauté chana dal, red chilies and hing

After chana dal turns golden add a piece of tamarind, coconut, salt and saute

Let the mixture get cool .

Add the cooled mixture to mixer and blend with little water or no water

Lastly add tadka 

Groundnut chutney

All nuts are very healthy are contains good amount of protein in it. This groundnut chutney can be consumed along with Dosa, Idly, Rice and Rotis. Ground nut is also known as peanut is a legume crop which has high oil content. Peanuts contain essential nutrients like vitamin B and E and also contains good amount of dietary fiber. It also has 25g of protein per 100g serving.

INGREDIENTS REQUIRED:

Groundnut- 250 gm

Red chilies/ green chilies-8

Tamarind- a piece

Salt as required

METHOD

Fry all the above ingredients till the groundnut turns golden brown

Add the above mixture to the mixer (add little water) and blend

Lastly add tadka

A very good combination for idli, dosa, chapathi.

Pudina Chutney

Mint Leaves

Pudina also known as mint can be grown easily even at home. Mint is used as a medicinal herb to treat stomach pain and chest pain. Mint is used in many ways. One simple and easy recipe is given here. Do try it and let us know.

INGREDIENTS REQUIRED:

Pudina –one bunch

Tur dal -4 tsp

Red chillies- 7 to 8

Tamarind

Salt as required

METHOD

Step1: fry tur dal ,red chili, salt , hing and keep aside

Wash pudina leaves and fry until the water gets drained(do not add water) in Pudina.

Blend step1 to a powder form

To the above mixture add pudina ,tamarind in a blender (add water as required)

Lastly add tadka

Coriander Chutney

Coriander leaves

 The dish remains incomplete without the use of coriander leaves. The Aroma of coriander is just mesmerising and very healthy. The leaves of coriander contain 92% water and are rich in Vitamin A, K and C with moderate dietary minerals. It is an annual herb which belongs to family Apiaceae. It is also known as Chinese parsely.

INGREDIENTS REQUIRED:

Coriander -1/2 bunch of coriander

Coconut grated – 1cup

Green chillie-5 to 6

Tamarind

Salt as required

METHOD

Step1: fry coconut, green chillies, tamarind and salt

Wash coriander leaves and add to the above mixture and blend (without water)

Lastly add tadka.

Fenugreek seeds Chutney

Fenugreek seeds

Methi seeds are also known as fenugreek seeds. It is soaked overnight and drink the water helps in improving the digestive problems and also good for diabetic people. It is also used for weight loss program.

INGREDIENTS REQUIRED:

Methi seed-4tsp

Coconut grated-1/4 cup

Red chillies-3 to 4

Tamarind

Salt as required

METHOD

Step1: fry methi seeds, red chillies and hing .

Add the above mixture ,coconut tamarind and salt to the mixer and blend it well with little water.

jaggery can also be added if required 

Lastly add tadka.

Ginger Chutney

Ginger

It is a flowering plant where the roots are used in cooking and medicine. Young ginger is juicy and fleshy while the matured ginger is fibrous and dry. It is one of the main ingredients in the Indian food. It also plays a very important role Ayurvedic Medicine. Here is a simple recipe from ginger. Try it out and do let us know.

INGREDIENTS REQUIRED:-

Ginger-finely grated 50gm

Dry coconut-1 cup

Chilies- 1 or 2 if required

Tamarind

Jaggery-small piece

Salt as required

METHOD:

Step1: add 2tsp of ghee to the pan and fry ginger

 Step2: take another pan , fry dry coconut, tamarind, salt

Add all the above mixture and jaggery to mixer and blend 
(add water if required)

Lastly add tadka
